Easy Vegan Lunch

Since I became a vegan two years ago, I have been searching for new recipes and modifying others in order to make them vegan-friendly.

I’ve always loved cooking and baking so creating all these new recipes for me was a challenge that got me really excited. I know sometimes recipes are hard to do or need a lot of ingredients which most of the time we don’t have at home. So that is why I wanted to show you how to do these easy vegan and healthy recipes you can for an improvised lunch or dinner or even as a snack.

2 Sweet potatoes

1 tbsp paprika

1 tbsp garlic powder

2 eggplants

1 tbsp curry

1 tbsp garlic powder


  1. Preheat the oven at 210ºc or 410ºf, cut the veggies into slices.
  2. Once you have cut the eggplant put in a bowl and add some salt and leave it for about 15 minutes so that the eggplant “sweats” that savory taste it has
  3. Add the paprika and the garlic powder to the sweet potato slices
  4. Wash the eggplant and the add the curry powder and the garlic
  5. introduce the slices in the oven for about half an hour



1 can of chickpeas

2 tbsp of tahini

1 clove of garlic

1 lemon juice

1 tbsp of cumin

1 tsp of olive oil

1 cup of water


  1. Drain and rinse the chickpeas
  2. Add in a food processor all the ingredients and blend for about 15 minutes or until you get a smooth paste
  3. Once you got the texture you like you can add any ingredient into your base hummus a personally like it with some paprika or with roasted peppers.


(serves 2)


3 tomatoes

1/2 onion

1 clove of garlic

1 cup of water

1 tbsp of oregano

1 pinch of salt

1 tbsp of olive oil

pinch of pepper


  1. Peel off the tomatoes and cut it into slices among the onion and the garlic.
  2. Use and immersion blender to puree the soup until smooth
  3. Add the oregano, olive oil, water, salt, and pepper and boil it. Once it starts boiling, reduce to a simmer and let it cook for about 15 minutes.


(half a dozen)

2 small bananas

1 cup of shredded coconut

1 tsp of vanilla extract


  1. Preheat the oven at 210ºc or 410ºf
  2. Smash the bananas until you get a puree consistent
  3. Add the coconut shredded and the vanilla extract and mix it all very well
  4. Take an oven plate and place the dough trying to make round shapes
  5. Cook them for about 15 minutes or until the start getting golden
