Falafels are a super easy and healthy meal you can prepare in advance and enjoy whenever you want.

Chickpeas are a great source of protein when following a plant-based diet, a touch of sesame seeds adds calcium to the recipe making these falafels a powerful source of minerals and vitamins for the body.

INGREDIENTS

2 cups of presoaked in water chickpeas

1/2 an onion

1 clove of garlic

2 tsp of fresh parsley

1 lemon juice

1 tsp of cumin seeds

2 tbsp of chickpea flour

 A pinch of salt and pepper

 

METHOD

  1. Preheat the oven to 180ºC
  2. Soak the chickpeas for at least 6 hours. I soaked them the night before that way you assure they are tender enough
  3. In a food processor add the onion, garlic, and parsley. Pulse for a couple of minutes or until well combined. The should be really small pieces of it
  4. Add the pre-soaked chickpeas to the food processor and pulse for another couple of minutes. Be careful because we want it to blend but not become a paste-like hummus
  5. Add the lemon juice,  the chickpea flour, cumin seeds, salt and pepper and pulse for a minute
  6. Make small balls with the paste and sprinkle it with sesame seeds
  7. Bake for 15 minutes approx. Be careful in this step because sesame seeds take a while to toast so you make think the falafels are not cooked yet because of it but they’re actually done and ready to enjoy
