Healthy Banana Ginger Cookies

Soft, vegan and GF cookies

These healthy cookies are super easy to make and will only take you 5 minutes. Packed with potassium, fiber, and good carbs. They will make your breakfasts so delicious.

 

INGREDIENTS

3 ripe bananas

1 cup of oat flour

1 tsp of baking powder

1 cup of coconut sugar

2 tbsp of Blackstrap Molasses

1 tsp of Ground ginger

1 1/2 tsp of cinnamon

1 tsp of vanilla extract

 

METHOD

1. Preheat the oven to 250ºC. Whisk together the oat flour, baking powder, cinnamon, ginger and coconut sugar. In a separate bowl mash the bananas until you get an egg texture, add the blackstrap molasses and vanilla extract to this mix

2. Add the flour mixture to the wet mixture and combine well. Let it sit for half an hour.

 

3. Line a baking sheet with parchment paper. Drop the cookie dough into round scoops onto the prepared baking sheet. Bake at 250ºC for about 15 minutes. Cool on the pan for at least 5 minutes before transferring them.
