Pumpkin Vegan Bread

This pumpkin bread is packed with potassium and antioxidants. Oats reduce cholesterol and add fiber while the cinnamon helps your immune system

INGREDIENTS

1 cup of whole wheat flour

1/2 cup of oat flour

3/4 cup of pumpkin puree homemade or unsweetened canned

1/2 cup of maple syrup

3 tbsp of coconut sugar

3 tbsp of olive oil

2 flax eggs ( 2 tbsp of flaxseeds + 6 tbsp of hot water)

2 tsp of baking powder

1 tsp of cinnamon

1/2 tsp of nutmeg

1/2 tsp of vanilla extract

1/4 tsp of cardamom

 

METHOD

  1. Preheat the oven to 350ºF or 250ºC. Coat a loaf pan with some oil
  2. In a big bowl mix olive oil, pumpkin puree, maple syrup, coconut sugar and flax eggs. Mix it until well blend
  3. In another bowl mix the flours with the baking powder and all the spices. Add this mixture to the previously made mixture and beat until well blended
  4. Pour the batter into prepared pan and bake until a toothpick inserted in the loaf comes out clean, around 55 -60 minutes. Let it cool before cutting it into slices
