Vegan Apple Cake

Apples are a rich source of antioxidants. High in fiber and low in energy density, which makes them ideal for weight loss. Oat flour keeps you full for a longer period of time and whole grain flour adds some extra vitamin B and fiber to this super healthy and delicious apple cake

INGREDIENTS

3 small apples

3 flax seeds eggs ( 3 tbsp of ground flax seeds + 9  tbsp of warm water )

2 tsp of baking powder

60 gr of whole grain flour

20 gr of oat flour

1 tsp of cinnamon

50 gr of olive oil

50 gr of coconut sugar

60 ml of almond milk (no sugars added)

Crumble

60 gr of almond meal ( or the pulp of the almond milk)

20 gr of coconut sugar

25 gr of coconut oil

 

METHOD

Crumble

  1. Place the almond meal or pulp and coconut sugar in a bowl. Add the coconut oil, slightly warm and combine it. Use your hands to mix it all well trying to create a breadcrumb like texture
  2. Wrap the crumble mix with cling film and keep refrigerated until needed.

For the Cake

  1. Preheat the oven to 180ºC
  2. Cut the apples in very thin slices
  3. Combine the flax eggs and sugar in a bowl and mix it together. Continue by adding the cinnamon and flours
  4. Add the milk and oil while keep stirring
  5. At last add the sliced apples carefully
  6. Place the mix in the cake batter using a spatula. Trying not to break the thin slices of apple
  7. Sprinkle the almond crumble on top and cook for about 50 -60 minutes
  8. Let it cool for about 2 hours in the refrigerator before cutting it
