Vegan GF Coconut-Lemon Macaroons
These super easy and delicious vegan GF coconut lemon macaroons are sugar added free and packed with nutrients. Bananas add that sweetness while making them rich in potassium and fiber.
2 very ripped bananas
1/2 cup of coconut shred
3 – 4 tbsp of oats flour
1/2 lemon juice
1 lemon zest
2 tsp of almond milk
1 tsp of vanilla extract
Preheat the oven to 180ºC. In a bowl mash the bananas until they have a puree consistency.
In another bowl mix the oat flour, coconut shred, vanilla extract and lemon zest
Incorporate the bananas into the dry mix and add the lemon juice and almond milk. Mix everything well until well combined.
In an oven pan form little circles with the batter(you can use an icecream spoon). Bake for around 20 minutes or until they start getting brownish.
