Vegan Coconut & Blueberries Mousse
Charged with probiotics to keep your gut happy
This vegan coconut & blueberries mousse contains probiotics to help your digestion. Rich in fiber, omega 3 and antioxidants. Blueberries and chia seeds make this vegan mousse a healthy dessert.
INGREDIENTS
Coconut Cream (from a can of coconut milk )
1/2 fresh lemon juice
1 cup of blueberries
2 tbsp of ground chia seeds
1 tbsp of shredded coconut
1 tsp of vanilla extract
3 tbsp of maple syrup or coconut sugar or 5-6 Medjool dates
1 capsule of probiotic powder
METHOD
- If using a can of coconut milk, freeze it for a couple of hours then divide the cream from the water. Safe the water for smoothies or cooking
- Mix the coconut cream with the lemon juice, vanilla extract, chia seeds and shredded coconut
- Blend the blueberries and maple syrup (Medjool dates or coconut sugar depending on what you are using)
- Combine both mixtures, taste it to see if it needs more sugar or not. I prefer it a little bit acid but I know not everybody is a fan of it. So try it, so you can get the perfect flavor
- Add the probiotic capsule
- Leave it in the fridge for a couple of hours, until it gets thicker
- Serve it with some crushed nuts and banana flambé
- Enjoy this super easy and healthy dessert
