Warm quinoa salad

A sophisticated and super healthy salad

 

This warm quinoa salad is a gluten-free delicious dish for a winter dinner. Packed with fiber and lots of vitamins and minerals, vitamin A and beta-carotene which helps the immune system.

INGREDIENTS

2 cups of quinoa

1/2 a zucchini

1/2 cup chopped pumpkin

1/2 cup sun-dried tomatoes

1 Avocado

5 fresh basil leaves

2 tbsp olive oil

1 tbsp vinegar

1tsp mustard

METHOD

  1. Cook the quinoa for 20 minutes. While the quinoa is cooking roast the pumpkin and the zucchini until tender and brownish
  2. Soak the tomatoes in boiling water for about 10 minutes, or until tender
  3. Cut the zucchini, pumpkin, basil leaves, avocado, and tomatoes in small pieces. Mix them all together and add the cooked quinoa
  4. In a small bowl mix the olive oil, vinegar, and mustard until well combined. Add it to the quinoa mix and stir until well combined
