Healthy Vegan Lentil Dahl

Turmeric, curry, and cumin marry beautifully here to create a  flavor-rich plate. Rich in fiber and iron this Vegan lentil Dahl will help lower cholesterol and balance blood sugar


1 onion, finely diced

1 clove of garlic

1 tomato, finely diced

2 cups of red lentils

2 tbsp of Olive oil

70 ml of coconut milk

4-5 cups of water

1 tbsp of grated fresh ginger

1 tbsp of garam masala

1 tbsp of curry powder

2 tsp of ground turmeric

2 tsp of ground cumin

1 tsp of cinnamon

Salt and pepper to taste


  1. In a large pot, over medium heat, add the olive oil. Once it is hot add the onion and cook, stirring until soft and translucent, about 6 minutes.
  2. Add the garlic and ginger and cook for a minute, until fragrant
  3. Add the spices: curry, cumin, turmeric, garam masala, and cinnamon. Stir for about 30 seconds.
  4. Add the tomato and stir for a couple of minutes. Add the lentil and stir until coated with everything
  5. Add 2 cups of water and the coconut milk and bring to boil. Lower the heat to a simmer. Cook, for about 20-30 minutes until lentils are very soft and the stew is thick. Stir occasionally to prevent sticking and adding extra water if necessary. Season to taste
