Vegetables – Quinoa Soup


This vegetable soup is perfect for those cold winter days. Rich in proteins, iron, and vitamin E found in quinoa and cumin seeds.


1 Tomato

2 celery stalks

1 leek

1 onion

1 garlic clove

1 cup of mushrooms

3 basil leaves

1/2 cup of broccoli

2 tsp of cumin seeds

1 cup of water

1 cup of vegetable broth

1/2 cup of quinoa



  1. Smash the garlic and cumin seeds in a mortar until well crashed
  2. Add some olive oil to a saucepan, when it starts heating add the smashed garlic and cumin seeds
  3. Cook for a couple of minutes and add the chopped onion. Cook for a couple of minutes (until onion is tender)
  4. Add the chopped tomato and the cup of vegetable broth. Let it sit for about 3 minutes
  5. Add chopped leek and celery stalks and cook for 5 minutes
  6. Add the basil leaves and rest of veggies and let it cook for another 5 minutes
  7. Finally, add the quinoa and cook for 10 minutes (until quinoa is soft and tender)

P.S: You can add some squeezed lemon juice when serving the soup or chili flakes if you like to add some extra flavor. But it tastes really good just like this
